Thumbprint Cookies

Ingredients

  • 2 Cups Almond Flour
  • 1/4 Tsp Salt
  • 1/4 Tsp Baking Powder
  • 1/4 Cup Honey
  • 1/4 Cup Oil
  • 1/4 Tsp Almond Extract
  • 1 Tsp Vanilla Extract
  • 1 Tsp Lime Juice
  • 1/2 Cup Jam (of Choice)

Instructions

  1. Preheat Oven to 350F: Line a baking pan with parchment paper.
  2. Add Dry Ingredients to a Bowl: Mix almond flour, salt, and baking powder.
  3. Add Wet Ingredients: Pour in honey, oil, almond extract, vanilla extract, and lime juice. Mix until well combined.
  4. Scoop Balls of Cookie Dough: Scoop two tablespoons of dough and form into a ball and place on lined baking pan, leaving 1 inch of space between.
  5. Press Thumbprint into Dough: Use a 1/2 tsp measuring spoon to gently press thumbprints into the dough.
  6. Fill the Holes with Jam: Use a 1/4 tsp measuring spoon to fill holes with jam of choice. Set some jam aside to top cookies with additional jam after they removed from oven.
  7. Pop Into Oven: Bake for about 10-12 minutes. Remove from oven and allow to cool on baking pan for 5 minutes before transferring to cooling rack.
  8. Enjoy!

Notes: For a vegan version, substitute honey for maple syrup. For an oil-free version, substitute oil for coconut milk.
